Vietnam is a region of rice vermicelli. In the North, there are vermicelli thang, vermicelli riêu, vermicelli with shellfish, vermicelli ngan, vermicelli with beans, vermicelli with flank meat and vermicelli soup. Famous ones in the Middle are Hue noodle soup and vermicelli "Two Saints An Thai (An Thái)" (in Binh Dinh (Bình Định)). And in the South people are familiar with vermicelli with skin of pork, spring roll vermicelli, vermicelli with grilled pork and vermicelli Nuoc Ken (nước kèn) Khmer. Although the above kinds of vermicelli can be found anywhere, if you want to enjoy bún nước kèn, you must go to Chau Doc (Châu Đốc), An Giang Province.

In order to have a bowl of good bun nuoc ken (bún nước kèn), they need to have "fresh water fish" of which meat must be stiff. They cleanse it and put it into the boiling cauldron. When the fish is done to a turn, they take it out, let it cool down, scrape the meat and leave the bones. A part of this fish meat is used to make "cha bong" ( cha bong) and pound into powder.


People fry onion and garlic without grease or oil, add "ca ri" (ca ri), đinh hương, cinnamon and fish powder and fry them all with the other part of fish meat. This mixture is put into the pot of boiling fish water and additives are flavoured (if there is kroeung, a spice of Khmer people, it will be more tasty). After that, they pour the first extract juice of coconut and let the slight fire.


At last, they arrange salad, banana flowers, bean sprouts, and cinnamon into the bowl, put cermivelli on and pour the consommé. The taste would be strange and impeccable.


Although it is a speciality of Chau Doc, bun nuoc ken (bún nước kèn) is not sold commonly in many restaurants and food stores of this area. Decades ago, this was a kind of peddled wares and people sold it with a rattan frame on their shoulder along The Canal (on National Street 91, 7 kilometres from Chau Doc Ward). In the morning, many people sit beside these carrying sellers and have breakfast.
