Goats here are raised on limestone
mountains with leaves as their foods. Hence, their meat is much better
than hill-raised goat meat. Goat meat here is made to become a featured
speciality, strongly charming in countryside taste, inherited with
unique know-how that make it become well-known speciality like beef
noodle (phở bò) in Nam Dinh (Nam Định), green bean cake (bánh đậu xanh)
in Hai Duong (Hải Dương) or fermented pork roll (nem chua) in Thanh Hoa
(Thanh Hóa).
